Making Pizza

Pizza was requested for dinner tonight – we never buy in pizza, preferring to make it ourselves as it tastes better and costs a lot less.

Our basic pizza dough is 500g strong white flour, 2 heaped teaspoons of easy-blend dried yeast, a good couple of twists of the salt mill, approximately 300ml of warm water and 3 tablespoons of extra virgin olive oil.   I have to confess I don’t hand knead pizza dough (0r bread) but put my faith in my trusty Kenwood Chef and knead the dough for about 5 minutes on minimum with the dough hook.  After left in a warm place for about an hour it should have doubled in size.  Then we roll out a couple of bases.  While the dough was rising I made a tomato sauce for the base, with a finely chopped onion, a carton of chopped tomatoes, and some herbs – dried basil, as I didn’t have fresh.


We cook the bases for about 10 minutes before adding the sauce and toppings.   OH and small person went for ham and pineapple, I had tuna and anchovy.  We all had torn mozzarella.   All was good, everyone was happy – yum.


Small person is now asleep in bed and we are about to settle down for the mid-season finale of The Walking Dead. life is good.
