Making meatloaf


I hope you have all had a good weekend.  I realise with many American readers I might be on dangerous ground here as I don’t know what constitutes a proper American meatloaf.

What I made today is a recipe that works for us and I call it meatloaf as it contains various meats, combined with a bread stuffing  mix and baked in a  loaf tin – so hopefully it doesn’t offend meatloaf purists too much!


200grams bacon lardons

meat from 4 good quality sausages

300 grams minced beef

one packet sage and onion stuffing

2 finely chopped onions

two eggs to bind

salt and pepper to season.

I make up the stuffing mix and then add all the other ingredients in a big bowl – get my hands in and mix it all together.   This makes enough to fill to loaf tins.  One was cooked for dinner today and the other has gone in to the freezer for another day.

This was served with the usual Sunday roast trimmings – roast potatoes, Yorkshire puddings, carrots, spring greens and gravy.  Yum!
