Spicy carrot and coriander soup

Soup night tonight – we had the smallest amount of snow today – so big bowls of homemade soup and thick slices of homemade bread was just the thing for dinner.

Recipe:

Finely chopped large onion

6 decent sized carrots

3 medium potatoes

one tablespoon cumin

vegetable stock

handful of chopped coriander.

Sweat the onion down in a little bit of oil first, then add the peeled and chopped potatoes and carrots, sprinkle over the cumin and sweat all these down.    Then add the stock and bring to the boil.   Simmer for 10 minutes and then leave to cool before blitzing, once blitzed add the coriander.

Yum!
