Scone based pizza recipe

Our menu plan has been moved about a little bit this week so we had our scone based pizza tonight rather than last night.

I think a scone based pizza is a great mid-week dinner, if we make pizza at the weekend then we do make proper bread-dough bases but that is a bit time consuming for mid-week, so a scone base is a good compromise.

The base recipe:

300gms self raising flour (I used a mix of wholemeal and white)

Salt – a good couple of twists of the grinder

A good shake of dried herbs (I used oregano)

4 tablespoons of olive oil

1 beaten egg

Milk – as much as is needed to work the dough

Mix all the above until you have a workable dough that you can roll out to the required shape.

Place dough on lightly oiled baking tray.

Spread the base with:

Homemade tomato sauce (chopped onions sweated down, passata, garlic, herbs)

Tonight our topping was ham and three cheese (red Leicester, cheddar and mozzaerella).

This went down well and there are leftovers for lunch tomorrow.   We had this with a green salad.

Today was spent doing more exam marking – that is pretty much the daily agenda at the moment.

A little bit of hand sewing now (on the quilt) to relax before bed.
