Cowboy dinner…

I don’t actually know any cowboys but…

Dinner was a variation of bangers and beans:

6 sausages – browned in a big pan

2 onions – chopped and softened

mushrooms – handful chopped and softened

Garlic – couple of cloves chopped and softened

Passata – one box of poured over all of the above

Herbs – generous sprinkle of parsley and oregano

Baked beans – one tin added

Butter beans – one tin added

Then the whole lot left to gently cook for 45 minutes or so:


Okay, from the photo it looks  like orangey-brown mush but it really was tasty!  I also made a fresh loaf to have with it and a green salad.

Pudding was a handful of blackberries, softened in a pan with a sprinkle of sugar, served with a sprinkle of sugar-free museli and a good dollop of natural yoghurt.


And all was good…
