I made burrito’s last night but played around with the traditional way of doing them a little.
Traditionally rice is added to the meat, beans and vegetables and then wrapped in the tortillas but I find this a bit much and always do the rice on the side – OH likes it but I give it a miss because with the bread of the tortillas it is just too much for me. Anyway:
Turkey burritos (oven baked):
Turkey breasts (cut in to strips)
Peppers – cut in to thin strips
Chopped tomatoes (well seasoned, add whatever spices and herbs suit your tastebuds)
Fry the turkey strips so they are just coloured on each side. Remove from pan.
Gently fry the peppers and chopped spring onions.
Remove the pan with the vegetables from the heat and add the turkey strips, kidney beans and some of the seasoned/spiced chopped tomatoes – mix well.
Take one tortilla, put some of the meat and veg mix in the middle, roll it up and place in lightly greased ovenproof dish. Continue this until all the mixture is used up, placing the rolled, filled tortillas side by side.
Spoon the rest of the seasoned/spiced chopped tomatoes over the tortillas.
Cover with grated cheese.
Place in a pre-heated oven at 180 and cook for 40 minutes.
I serve this with salad and rice – as above mentioned, traditionally the rice should be mixed in with the meat and vegetables and rolled up in the tortillas but I never want rice with this dish as it is too filling with the bread so I serve it on the side for OH to have some.
