Whilst we are fairly committed carnivores in this house we do have a few nights each week when we eat a vegetarian meal.
Last night I made Homity Pie – it was really good and there are leftovers for lunch!
Shortcrust pastry (300g plain flour, 150g lard, enough water to bind)
Potatoes (chopped to bite sized pieces and par-boiled)
Leeks – 2 chopped and fried gently in oil with a bit of butter
Cheese – lots, grated
Salt and pepper
Line a spring-release tin with the pastry.
Mix the potatoes, leeks, herbs, cheese and cream.
Put the mixture in the pastry lined tin and top with more grated cheese.
Bake at 180 for about 30 minutes.
Serve with whatever takes your fancy – I had salad, OH and small person had baked beans?!
A really good, filling, warming, meat-free dinner.
