We had one of my favourite dinners last night.
Homemade falafel, tabbouleh, hummus and salad.
We always make our own falafel as they are much less stodgy than bought ones.
And they are super easy to make:
Soak dried chick peas overnight
Next day put dried chick peas in food processor with a handful of washed and dried spinach, garlic, season with ground cumin, ground coriander and some salt and pepper.
Once you have blitzed the mix take a bit at a time and shape in to round balls (about the size of a golf ball). Then fry them in oil – you need just enough oil to cover them. They take minutes to cook.
We always use dried chick peas for this as the tinned ones make the mixture too wet. And you only need to soak the chickpeas overnight, no cooking is required before you make the mixture.
I do always have tinned chick peas in for making hummus and dried chick peas for making falafel. We like chick peas!
Lovely weather again today and supposedly getting really warm by the end of the week. I think I might have to get all the winter blankets washed so that I can put them away.
