It was chick pea burgers on the menu tonight.
To be honest I wasn’t sure about this idea as I thought they might be a bit too falafel like (which we love and already make quite a lot) but, in fact, they were different enough to be a pleasant surprise.
2 tins of chick peas (drained)
One large onion and one large green pepper (finely chopped and fried off)
1 teaspoon dried cumin
1 teaspoon dried coriander
Three tablespoons of wholemeal flour
Once the chickpeas have drained mash them up a bit in a large bowl, add in the rest of the ingredients, mix thoroughly and then shape in to whatever size patties you like.
The recipe I was loosely following said then to fry them but instead I put them in the little oven, brushed with a little rapeseed oil and then baked them for 40 mins, turning them once halfway through.
OH declared them a triumph and as he would so much rather have a beef burger that is quite a compliment.
We had them with some cous cous and lots of salad (leaves, spring onions, grated carrot, tomatoes, beetroot, red onion) and some red onion chutney.
Quite quick to make, cheap to make and super yummy. Another good use of the humble chick pea.
